Drain and set potatoes aside to cool for about 20 minutes.<\/li>\n\n\n\n<li>While the potatoes are cooling, in a serving bowl whisk together the oil, vinegar, mustard, salt and pepper.<\/li>\n\n\n\n<li>Cube the cooled potatoes and place in the bowl with oil and vinegar dressing.
