Ingredients
- 1 pound lean ground beef
- 1 cup chopped onion
- 1 cup chopped carrots
- 28-ounce can of crushed tomatoes
- 1 cup whole grain elbow pasta
- 16-ounce bag frozen mixed vegetables
- 1 tablespoon Italian seasoning
- Salt
- Pepper

Directions
- Wash hands with soap and water.
- Turn stove on to medium heat. Cook ground beef until no longer pink or temperature reaches 160 degrees Fahrenheit.
- Add the chopped carrots and onions. Cook for 5-7 minutes or until onions are soft.
- Add to the skillet the vegetable broth, crushed tomatoes, pasta, mixed veggies, Italian seasoning, salt, and pepper.
- Simmer everything for 15 minutes. Stir every 5 minutes.
