Hamburger Vegetable Soup

Ingredients

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 28-ounce can of crushed tomatoes
  • 1 cup whole grain elbow pasta
  • 16-ounce bag frozen mixed vegetables
  • 1 tablespoon Italian seasoning
  • Salt
  • Pepper

Directions

  1. Wash hands with soap and water.
  2. Turn stove on to medium heat. Cook ground beef until no longer pink or temperature reaches 160 degrees Fahrenheit.
  3. Add the chopped carrots and onions. Cook for 5-7 minutes or until onions are soft.
  4. Add to the skillet the vegetable broth, crushed tomatoes, pasta, mixed veggies, Italian seasoning, salt, and pepper.
  5. Simmer everything for 15 minutes. Stir every 5 minutes.
