Raisin Tapenade

Ingredients

  • 1 cup raisins
  • 1/4 cup pitted Kalamata olives (drained)
    2/3 tablespoon walnuts
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil
  • 1 large whole grain pita bread (approximately 16 wedges or melba rounds)

  • Tapenade comes from Provençal in France and is used as a spread for appetizers.
  • Raisins are fat and cholesterol free, low in sodium, and full of antioxidants.
  • About 1/4 cup of raisins equals a 1/2 cup of fresh fruit!

Directions

  1. Wash hands with soap and water.
  2. Place tapenade ingredients in food processor.
  3. Blend until raisins, olives, and walnuts are finely chopped.
  4. Can be made ahead and refrigerated.
  5. Serve with melba rounds or pita wedges.
