Shirini

Ingredients

  • 1 1/4 cups granulated sugar
  • 1/2 cup water
  • 1 1/4 pounds of winter squash like butternut, acorn, or pumpkin (peeled, de-seeded, and diced into 1/2 inch chunks)
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon cinnamon (optional)

  • Shirini means “sweet” in Kurdish and is many different desserts commonly made with milk, dates, cashews, cardamom, and butter.
  • Wash all squashes before cutting them. Dirt from the outside can move to the flesh if not washed properly.
  • Be careful when mixing the ingredients together, the syrup mixture gets very hot!

Directions

  1. Wash hands with soap and water.
  2. Mix together sugar and water in a large, deep pan and place on medium heat. Boil the mixture until it forms a thick syrup.
  3. Add diced winter squash into pan with sugar syrup, mix well. Cook in the syrup, mixing occasionally, until the mixture is almost all absorbed and the squash is tender.
  4. Arrange the pumpkin on a plate, garnish with walnuts and cinnamon.
