Ingredients
- 1 papaya, peeled and chopped (about 2 cups)
- 1 peach, peeled and chopped (about 1 cup)
- 1 mango, peeled and chopped (about 1.5 cups)
- 1/4 cup coconut milk
- 2 teaspoons honey or maple syrup
- 1/4 cup chopped peanuts

- This dish is based on a common West African dessert called “after-chop”.
- Substitute any of your favorite in-season fruits such as blueberries or raspberries.
- Use pre-chopped frozen fruit to cut down on prep time.
Directions
- Wash hands with soap and water.
- Cut open the papaya. Scoop out the black seeds in the center and peel skin. Slice lengthwise into quarters and chop into bite-size cubes.
- Peel peach, cut in half and remove pit. Chop into bite-size cubes.
- Peel the mango and slice the fruit from the pit, and chop the mango chunks into bit-size cubes.
- Place the fruit in a bowl. Drizzle the coconut milk, honey, and peanuts over the fruit. Stir to coat.
