Avocado Garden Salad

Ingredients

  • 6 cups mixes salad greens
  • 3 tomatoes, chopped
  • 5 green onions, white and light green parts chopped
  • 1 cucumber, chopped
  • 1 large avocado
  • 2 tablespoons lemon juice
  • 1/3 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Directions

  1. Wash hands with soap and water.
  2. Rinse vegetables under cool running water.
  3. Mix salad greens, tomatoes, onions, and cucumber in a large serving bowl.
  4. In a small bowl, mix lemon juice, garlic powder, black pepper, and salt; stir with fork or whisk. Pour over salad mixture and toss together.
  5. Cut avocado in half lengthwise. Remove pit and peel avocado halves. Slice into thin wedges, about 1/8-inch thick.
  6. Arrange avocado slices on top of salad and serve.
