Ingredients
- 2 1/2 cups Vegetable Broth
- 2 Bay Leaves
- 1 3/4 cups Long-grain Brown Rice
- 2 cups Black-eyed Peas
- Nonstick Cooking Spray
- 1 cup Onion (chopped)
- 1 cup Celery (chopped)
- 1/2 cup Bell Pepper (chopped)
- 1/2 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1/4 teaspoon Chili Powder
- 1/4 teaspoon Paprika
- 1/4 teaspoon Black Pepper
- 1/2 teaspoon Thyme Powder
- 6 ounces Turkey Sausage
- 2 cloves Garlic
- 1/2 tablespoon Parsley
- 1/2 teaspoon Dried Oregano

- Dirty rice is a Cajun dish originally from Louisiana.
- Black-eyed peas are a great meatless source of protein.
- Leave out the sausage to make this dish vegetarian.
Directions
- Wash hands with soap and water.
- In a large skillet, combine vegetable broth and bay leaves; bring to a boil.
- Add rice and black-eyed peas to broth and cover.
- Reduce heat to simmer until all liquid is absorbed, about 18 to 20 minutes.
- Remove bay leaves and place cooked rice and black-eyed peas in a large bowl.
- Spray a nonstick skillet with cooking spray and heat over medium-high heat. Add onion, celery, bell pepper, dried spices, turkey apple sausage, garlic, parsley, and oregano.
- Sauté until sausage is thoroughly cooked, about 5 minutes, or temperature reaches 165 degrees Fahrenheit.
- Combine with rice and black-eyed pea mixture. Serve while hot.
