Dirty Rice and Black-eyed Peas

Ingredients

  • 2 1/2 cups Vegetable Broth
  • 2 Bay Leaves
  • 1 3/4 cups Long-grain Brown Rice
  • 2 cups Black-eyed Peas
  • Nonstick Cooking Spray
  • 1 cup Onion (chopped)
  • 1 cup Celery (chopped)
  • 1/2 cup Bell Pepper (chopped)
  • 1/2 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Chili Powder
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Thyme Powder
  • 6 ounces Turkey Sausage
  • 2 cloves Garlic
  • 1/2 tablespoon Parsley
  • 1/2 teaspoon Dried Oregano

  • Dirty rice is a Cajun dish originally from Louisiana.
  • Black-eyed peas are a great meatless source of protein.
  • Leave out the sausage to make this dish vegetarian.

Directions

  1. Wash hands with soap and water.
  2. In a large skillet, combine vegetable broth and bay leaves; bring to a boil.
  3. Add rice and black-eyed peas to broth and cover.
  4. Reduce heat to simmer until all liquid is absorbed, about 18 to 20 minutes.
  5. Remove bay leaves and place cooked rice and black-eyed peas in a large bowl.
  6. Spray a nonstick skillet with cooking spray and heat over medium-high heat. Add onion, celery, bell pepper, dried spices, turkey apple sausage, garlic, parsley, and oregano.
  7. Sauté until sausage is thoroughly cooked, about 5 minutes, or temperature reaches 165 degrees Fahrenheit.
  8. Combine with rice and black-eyed pea mixture. Serve while hot.
