Fried Rice

Ingredients

  • 3 teaspoons vegetable oil
  • 1 clove garlic, minced
  • 2 cups vegetables, fresh or frozen, diced or chopped
  • 1 egg, beaten
  • 2 cups rice, cooked, cold
  • 2 tablespoons soy sauce
  • Black pepper to taste
  • 1 cup firm tofu, shrimp, or chopped meat (optional)

  • If using tofu, shrimp, or meat, cook that in the pan before starting with step 1 below.
  • Any and all vegetables work great with this recipe. You can use whatever you have on hand.

Directions

  1. Wash hands with soap and water.
  2. Turn on stovetop to medium high. Pour oil into skillet and heat until sizzling.
  3. Add garlic and vegetables to skillet. Stir fry vegetables until slightly brown and tender.
  4. Push vegetables to the sides of the skillet and add egg to the center of skillet. Scramble egg and mix with vegetables.
  5. Add rice, soy sauce and black pepper. Turn heat down to medium low.
  6. Mix rice with vegetables. Cook until heated through, stirring frequently.
