Kokolaisa (Cocoa Rice)

Ingredients

  • 3 cups uncooked rice
  • 6 cups water
  • 2 cups coconut cream
  • 1 cup sugar
  • 2 Tablespoons cocoa powder

  • Kokolaisa is from the island country of Samoa and is typically eaten for breakfast or dessert.
  • Add orange or lemon peel to add a zesty kick to this dish.
  • Use any rice you prefer, but if using brown rice increase amount of water used by 1 cup.

Directions

  1. Wash hands with soap and water.
  2. Add rice and water to large pot and bring to boil over medium-high heat. Boil until cooked (about 20 minutes).
  3. Mix sugar and cocoa into coconut cream well until there are no clumps and sugar has been dissolved.
  4. Add coconut/sugar mixture to rice and bring to simmer.
  5. Simmer for 5 minutes until thickened and serve warm.
