Ingredients
- 3 cups uncooked rice
- 6 cups water
- 2 cups coconut cream
- 1 cup sugar
- 2 Tablespoons cocoa powder

- Kokolaisa is from the island country of Samoa and is typically eaten for breakfast or dessert.
- Add orange or lemon peel to add a zesty kick to this dish.
- Use any rice you prefer, but if using brown rice increase amount of water used by 1 cup.
Directions
- Wash hands with soap and water.
- Add rice and water to large pot and bring to boil over medium-high heat. Boil until cooked (about 20 minutes).
- Mix sugar and cocoa into coconut cream well until there are no clumps and sugar has been dissolved.
- Add coconut/sugar mixture to rice and bring to simmer.
- Simmer for 5 minutes until thickened and serve warm.
