Ingredients

- 1 tablespoon olive oil
- 1 small onion (chopped)
- 1 zucchini, (sliced)
- 2 cloves garlic (minced)
- 10 eggs
- 1 teaspoon salt
- ½ teaspoon turmeric (ground)
- ¼ teaspoon nutmeg (ground)
- ¼ teaspoon cumin (ground)
- ¼ teaspoon black pepper
- 2/3 cup cilantro (chopped)
- 2/3 cup parsley (chopped)
- ½ cup walnuts (pieces)
- ¼ cup raisins (purple or golden)
- Crushed red pepper (pinch, optional)

- This dish is based on “eggah” a popular Arabic egg dish.
- Substitute fresh cilantro and parsley with 1 teaspoon of the dried versions.
- Add any vegetables or nuts you have at home for your own unique spin!
Directions
- Wash hands with soap and water.
- Preheat oven to 375°F. Spray an medium sized baking dish with cooking spray; set aside.
- In a medium skillet, heat oil over medium-low heat. Add onion and cook until soft. Add zucchini slices and garlic; cook until zucchini is soft and begins to turn color. Remove from heat; set aside.
- In a large bowl, whisk together eggs, salt, turmeric, nutmeg, cumin, and pepper. Whisk in zucchini mixture, cilantro, 2/3 cup parsley, walnuts, and raisins.
- Pour mixture into prepared dish. Cover with foil and bake for 20 to 30 minutes or until center is set. Cool slightly on a wire rack. Serve warm.
- Top with additional parsley and crushed red pepper, if desired.
