Middle-Eastern Fritatta

Ingredients

  • Cooking Spray
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 1 zucchini, (sliced)
  • 2 cloves garlic (minced)
  • 10 eggs
  • 1 teaspoon salt
  • ½ teaspoon turmeric (ground)
  • ¼ teaspoon nutmeg (ground)
  • ¼ teaspoon cumin (ground)
  • ¼ teaspoon black pepper
  • 2/3 cup cilantro (chopped)
  • 2/3 cup parsley (chopped)
  • ½ cup walnuts (pieces)
  • ¼ cup raisins (purple or golden)
  • Crushed red pepper (pinch, optional)

  • This dish is based on “eggah” a popular Arabic egg dish.
  • Substitute fresh cilantro and parsley with 1 teaspoon of the dried versions.
  • Add any vegetables or nuts you have at home for your own unique spin!

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 375°F. Spray an medium sized baking dish with cooking spray; set aside.
  3. In a medium skillet, heat oil over medium-low heat. Add onion and cook until soft. Add zucchini slices and garlic; cook until zucchini is soft and begins to turn color. Remove from heat; set aside.
  4. In a large bowl, whisk together eggs, salt, turmeric, nutmeg, cumin, and pepper. Whisk in zucchini mixture, cilantro, 2/3 cup parsley, walnuts, and raisins.
  5. Pour mixture into prepared dish. Cover with foil and bake for 20 to 30 minutes or until center is set. Cool slightly on a wire rack. Serve warm.
  6. Top with additional parsley and crushed red pepper, if desired.
