Pipino (Cucumber) Salad

Ingredients

  • 1 tablespoon Fish Sauce
  • 2 teaspoons Sugar
  • 1 piece Ginger (1-inch, thinly sliced or minced)
  • 1/4 cup Vinegar (white, unseasoned rice, or apple cider)
  • Black Pepper to taste
  • 2 Cucumbers (very thinly sliced)
  • 1 Onion small (thinly sliced)
  • 2 Tomatoes (sliced)

  • This Filipino-style salad gets its unique flavor from fish sauce.
  • Fish sauce is naturally salty, so no need to add extra salt!
  • Cucumbers can be found all year round but are best between May to August.

Directions

  1. Wash hands with soap and water.
  2. Combine fish sauce, sugar, ginger, vinegar and pepper in a bowl.
  3. Rinse vegetables under cool running water.
  4. Add sauce to cucumbers, onion and tomatoes. Refrigerate at lease 30 minutes before serving.
