Skillet Spaghetti

Ingredients

  • 1⁄2 pound ground chicken
  • 1⁄2 medium onion, chopped
  • 2 garlic cloves, miced
  • 1⁄2 cup chopped green pepper
  • 1 teaspoon olive oil
  • 1 can diced tomatoes, undrained (15 ounces)
  • 1 1⁄4 cup water
  • 1⁄2 teaspoon chili powder
  • 1⁄2 teaspoon oregano
  • 1⁄2 teaspoon sugar
  • 4 ounces spaghetti, crumbled
  • 1⁄2 cup shredded mozzarella cheese

  • You can use lean ground beef, ground turkey, or 6 ounces of soy crumbles instead of ground chicken.
  • This meal can easily be doubled or tripled for larger families or leftovers.

Directions

  1. Wash hands with soap and water.
  2. Sauté ground chicken, onion, and green pepper in the olive oil. Cook until chicken is heated through or temperature reaches 165 degrees Fahrenheit.
  3. Add tomatoes with liquid, water, chili powder, oregano, and sugar. Bring to a boil.
  4. Split spaghetti noodles in half. Add to skillet.
  5. Cook covered until noodles are tender, about 9-10 minutes, stirring every few minutes.
  6. Sprinkle cheese on top. Cover and heat until cheese is melted (about 1-2 minutes).
