Ingredients
- 1⁄2 pound ground chicken
- 1⁄2 medium onion, chopped
- 2 garlic cloves, miced
- 1⁄2 cup chopped green pepper
- 1 teaspoon olive oil
- 1 can diced tomatoes, undrained (15 ounces)
- 1 1⁄4 cup water
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon sugar
- 4 ounces spaghetti, crumbled
- 1⁄2 cup shredded mozzarella cheese

- You can use lean ground beef, ground turkey, or 6 ounces of soy crumbles instead of ground chicken.
- This meal can easily be doubled or tripled for larger families or leftovers.
Directions
- Wash hands with soap and water.
- Sauté ground chicken, onion, and green pepper in the olive oil. Cook until chicken is heated through or temperature reaches 165 degrees Fahrenheit.
- Add tomatoes with liquid, water, chili powder, oregano, and sugar. Bring to a boil.
- Split spaghetti noodles in half. Add to skillet.
- Cook covered until noodles are tender, about 9-10 minutes, stirring every few minutes.
- Sprinkle cheese on top. Cover and heat until cheese is melted (about 1-2 minutes).
