Sour Cream Chicken Enchiladas

Ingredients

  • 1 bunch cilantro
  • 1 cup fat-free sour cream
  • 2 (7-ounce) cans jalapeno salsa
  • 2 (7 ounce) cans prepared green chili salsa
  • 2 skinless, boneless chicken breast halves, cooked and shredded
  • 1 medium onion, chopped
  • 12 (6-inch) flour tortillas
  • 2 cups reduced-fat shredded cheddar cheese

  • For a vegetarian option, you can use beans instead of chicken.

Directions

  1. Wash hands well with soap and water.
  2. Sour cream mixture: In a blender or food processor, puree cilantro, sour cream, jalapeño salsa and ½ can of the green chili salsa. Set aside.
  3. Chicken mixture: In a large bowl, combine shredded chicken, onion and the remaining 1½ cans of green chili salsa. Mix well.
  4. Preheat oven to 350 degrees F.
  5. Wrap 12 tortillas in 2 to 3 damp paper towels and heat in the microwave oven until soft, about 1-1½ minutes.
  6. Pour enough of the sour cream mixture into a 9- by 13-inch baking dish to coat the bottom.
  7. Place two heaping tablespoons of the chicken mixture in each tortilla, roll up and place seam side down in the baking dish. Pour remaining sour cream mixture over all and top with shredded cheese.
  8. Cover dish tightly with aluminum foil and bake at 350 degrees F for about 30 minutes, or until dish is heated through and bubbling.

Cook Together! Making Enchiladas with Kids

If your child doesn’t like spicy foods, that’s okay! For a kid-friendly version of this recipe, replace the jalapeño and green chili salsas with two 14.5 ounce cans of tomato puree mixed with 4 teaspoons of mild chili powder.
