Ingredients
- 4 cups spinach
- 2 medium oranges (peeled and separated) or 1 small can mandarin oranges
- 1 cup beets, drained and cut into thin strips
- 2 tablespoons canola oil
- 2 tablespoons apple cider vinegar
- 1/4 cup orange juice
- Dash of ground ginger
- Dash of pepper

Directions
- Wash hands with soap and water.
- In a bowl add spinach, oranges and beets.
- In a jar add the dressing ingredients, cover with a lid and shake until combined. You can also whisk with a fork in a small bowl.
- Pour dressing over the spinach, oranges, and beets. Toss to coat salad.
