Spinach, Orange, Beet Salad

  • 4 cups spinach
  • 2 medium oranges (peeled and separated) or 1 small can mandarin oranges
  • 1 cup beets, drained and cut into thin strips
  • 2 tablespoons canola oil
  • 2 tablespoons apple cider vinegar
  • 1/4 cup orange juice
  • Dash of ground ginger
  • Dash of pepper

  • Beets provide fiber and Vitamin C, and adds beautiful color to your salad!
  • Adding nuts like almonds or walnuts provides a good crunch and protein to your salad.


  1. In a bowl add spinach, oranges and beets.
  2. In a jar add the dressing ingredients, cover with a lid and shake until combined. You can also whisk with a fork in a small bowl.
  3. Pour dressing over the spinach, oranges, and beets. Toss to coat salad.
